Paleo Apple Cinnamon Loaf

Ingredients
  

  • 1/2 cup coconut flour
  • 1/4 cup almond flour
  • 2 tbs arrowroot, tapioca, or cornstarch for texture
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbs cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 1/4 tsp cardamom *optional
  • 1 medium apple, diced
  • 3 eggs
  • 3 tbs melted coconut oil
  • 1/3 cup coconut milk *or buttermilk, you want something with a little fat to it for the richness and thickness
  • 1/2 cup unsweetened applesauce
  • 1/3 cup maple syrup
  • 1 tbs coconut or brown sugar I like the mix of the two here, but could use all maple syrup, or all coconut sugar
  • 1 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 degrees, grease and line a loaf pan with parchment paper.
  • In a large bowl, whisk together the dry ingredients: coconut flour, almond flour, starch, salt, all spices, and baking soda.
  • In a seperate bowl combine the eggs, oil, milk, maple syrup, sugar, applesauce, and vanilla extract.
  • Pour the wet into the dry mix and stir to combine.
  • Fold in the diced apples. Save a few to sprinkle over the top!
  • Pour batter into prepared loaf pan. Sprinkle over remaining diced apples.
  • Bake for 50-60 minutes. Mine took right around that 60 minute mark!
  • Make sure the center is set and a toothpick comes out clean. Allow to cool completely before slicing!
  • Serve with tea, coffee, more butter and cinnamon sugar, or nut butter! It's healthy and a great mid day treat. And makes your place smell lovely.
