Preheat oven to 350 degrees, grease and line a loaf pan with parchment paper.
In a large bowl, whisk together the dry ingredients: coconut flour, almond flour, starch, salt, all spices, and baking soda.
In a seperate bowl combine the eggs, oil, milk, maple syrup, sugar, applesauce, and vanilla extract.
Pour the wet into the dry mix and stir to combine.
Fold in the diced apples. Save a few to sprinkle over the top!
Pour batter into prepared loaf pan. Sprinkle over remaining diced apples.
Bake for 50-60 minutes. Mine took right around that 60 minute mark!
Make sure the center is set and a toothpick comes out clean. Allow to cool completely before slicing!
Serve with tea, coffee, more butter and cinnamon sugar, or nut butter! It's healthy and a great mid day treat. And makes your place smell lovely.
