Everything Bagel Paleo Bread

A savory quick bread, perfect for toast, butter, cream cheese, or on its own

Ingredients
  

  • 1/2 cup almond flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbs flaxeed meal*
  • 1 cup tahini or cashew butter
  • 2 eggs
  • 2 egg whites
  • 1 tbs apple cider vinegar
  • 1 tbs maple syrup*
  • 2 tbs Everything Bagel Seasoning I have Trader Joes

Instructions
 

  • Preheat oven to 350 and grease a 9x5inch loaf pan. Line it with parchment paper and let it hang over the sides to make sure you can lift the loaf out.
  • In a bowl, whisk together the dry ingredients - almond flour, baking soda, salt, and the extra tablespoon of flaxseed meal. If you don't have flaxseed meal, you can add in 1 more tbs of almond flour or coconut flour, whatever you have!
  • Using a stand mixer or hand mixer, beat together the tahini, eggs, and egg whites. I beat this for a solid minute or so to get some fluffiness to those eggs!
  • Add in the apple cider vinegar and 1 tbs of maple syrup. You can also sub 1 tbs of water instead of the maple syrup! I added it in to balance out all the savory bagel spice.
  • Mix it all together until well combined.
  • Slowly add in the dry ingredients until fully incorporated.
  • Pour batter into prepared loaf pan. Top with a couple tablespoons of the Everything Bagel spice!
  • Bake at 350 for 20-30 minutes until a toothpick comes out clean, and it's nice and golden brown around the edges. Let it cool in the pan and then transfer to a rack to cool completely.
  • Slice it up and enjoy as is! Or get crazy and toast it up and top with all your favorite things.

Notes

*Flaxseed meal is optional! I had it on hand and tossed it in, but you can use an extra tablespoon of any flour you have.
*Maple syrup is optional as well. Just use a tablespoon of water if you'd like!
