Food processor or blender
- 1 can chickpeas drained *save the water!*
- 2 cloves garlic or 3 or 4, I always like more
- 1/4 cup tahini
- 3 tbs olive oil
- 1 tsp salt
- 1 tsp cumin
- juice of 1/2 lemon
- 2-3 tbsp water or water from the chickpea can to thin out
Drain chickpeas, reserving the water from the can. It's a great way to thin out the hummus to your desired consistency
Add in garlic, tahini, salt, lemon juice, olive oil, cumin, and whiz away!
Add in water or reserved water to thin out!
Taste and adjust seasonings as needed!
Top with a good swirl of olive oil, and sprinkle with any herbs and a little parika for color! (totally optional, but it's pretty)
This hummus is great as a snack or appetizer with veggies, pita chips, or pretzels. Can also be used in a wrap or on a sandwich.
My favorite way is as the base for a greek bowl! I spoon in a generous amount of hummus, add a good amount of ground spiced beef, and top with cucumbers, tomatoes, fresh dill or any herbs, drizzle more olive oil, and sprinkle over feta. Holy YUM Batman.
