  • Food processor or blender

  • 1 can chickpeas drained *save the water!*
  • 2 cloves garlic or 3 or 4, I always like more
  • 1/4 cup tahini
  • 3 tbs olive oil
  • 1 tsp salt
  • 1 tsp cumin
  • juice of 1/2 lemon
  • 2-3 tbsp water or water from the chickpea can to thin out

  • Drain chickpeas, reserving the water from the can. It's a great way to thin out the hummus to your desired consistency
  • Add in garlic, tahini, salt, lemon juice, olive oil, cumin, and whiz away!
  • Add in water or reserved water to thin out!
  • Taste and adjust seasonings as needed!
  • Top with a good swirl of olive oil, and sprinkle with any herbs and a little parika for color! (totally optional, but it's pretty)

This hummus is great as a snack or appetizer with veggies, pita chips, or pretzels. Can also be used in a wrap or on a sandwich.
My favorite way is as the base for a greek bowl! I spoon in a generous amount of hummus, add a good amount of ground spiced beef, and top with cucumbers, tomatoes, fresh dill or any herbs, drizzle more olive oil, and sprinkle over feta. Holy YUM Batman.
